Spicy Chicken Lettuce Cups with Pine Nuts & Water Chestnuts
paired with our Knights Valley Sangiovese


1 lb. chicken thighs, minced or ground
3 Tbsp. blended oil
¼ cup pine nuts, toasted
2 cloves garlic, minced
¼ cup water chestnuts, diced small
¼ cup sambal or chili paste
3 Tbsp. mint, minced
salt and pepper to taste
1 head of butter lettuce, leaves picked as cups


In a large pan over high heat, add the blended oil and then the garlic. Saute until slightly brown and add the chicken while stirring. Season with salt and pepper and then add the sambal and water chestnuts. Cook until the chicken is completely cooked and add the pine nuts and fresh herbs. Place a small amount of the chicken mixture in each cup and enjoy the blended flavor of the warm chicken mixture and the cool lettuce.
