Roasted Rosemary Half Chicken
paired with our Russian River Valley Chardonnay

1 whole chicken; 1lb fingerling potatoes
˝ cup extra virgin olive oil
1 Tbsp fresh chopped rosemary
1 ˝ tsp chopped fresh oregano
3 cloves chopped garlic, salt & pepper to taste

Preheat the oven to 375 degrees. Cut your chicken into halves. Place chicken and potatoes into a large bowl. Pour olive oil over them, and stir to coat. Scatter the chicken and potato pieces in a large baking dish, or cookie sheet with sides. Sprinkle with rosemary, oregano, garlic, salt and pepper. Bake for 1 hour in the preheated oven, uncovered. Baste during the last 15 minutes for extra crispness. Serve with your favorite vegetables or nice spring mix salad.
