Panzanella Salad (Italian Bread Salad)
paired with our Russian River Valley Chardonnay


2 lbs. cubed bread, lightly toasted (such as roasted garlic/rosemary/olive or a combination)
2 - 3 cups olive oil
1 cup white balsamic vinegar
1 cup pitted whole Mediterranean olives (green or black or both)
½ cup capers
2 Tbsp dried Italian herbs
2 Tbsp minced garlic
1 bunch of each: Italian parsley, thyme, rosemary, and basil (all roughly chopped)
1 cup toasted pine nuts
1 can of marinated artichokes plus the liquid (you may like more than one can)
2 cups shredded Asiago cheese
1 basket red cherry tomatoes (cut in half if very large)


Toss ingredients together till coated well. This salad is much better the next day and will need extra oil and vinegar to keep moist. Enjoy!
