Pancetta Crisp with Poached Pear & Creamy Bleu Cheese
paired with our Russian River 'Old Vine' Zinfandel, Amy's Vineyard


½ lb. pancetta, thinly sliced
4 poached pears
¼ lb. Bleu Cheese

Poaching Liquid:
1 bottle Ledson red wine
1 quart water
½ cup sugar
1 cinnamon stick
4 cloves

Combine pears and poaching liquid, and bring to a simmer. Place pancetta between two sheet pans and crisp in a 300 degree oven, checking frequently. Poach pears until tender in liquid. Cool, slice and place on pancetta crisp. Top with Bleu Cheese.
