Molten Chocolate Cake

paired with our Knights Valley Cabernet Sauvignon

13 oz. dark chocolate
14 oz. butter, unsalted
8 whole eggs
8 egg yolks
7 oz. all-purpose flour, sifted
9 oz. powdered sugar, sifted

Over a water bath heat the chocolate and the butter until they are completely melted using a whisk. Place the eggs in a large bowl and whisk to combine. Slowly add the chocolate mixture to the eggs as not to scramble them. Add in the dry ingredients a little at a time and whisk to combine. Mix until the mixture is smooth. Refrigerate for at least 2 hours. Cook in a 500 degree oven for 8-10 minutes in aluminum baking cups that have been sprayed with non-stick coating. Remove while hot and serve. The cakes should be cake-like on the outside and gooey on the inside.
