Marinated Green Bean Salad with Bacon & Onions
paired with our Napa Valley Sauvignon Blanc
Ingredients
Green Bean Salad
green beans, washed & trimmed
white boiling onions
bacon, sliced into 1 inch pieces & cooked till crisp (reserve bacon fat for cooking the onions) set aside
Dressing
balsamic vinegar
olive oil
ground mustard
black pepper
Directions
Blanch the green beans in salted boiling water and cool in ice water to stop the cooking (reserve the cooking water for the onions). Boil the onions until done and saute in the reserved bacon fat, till golden brown. Marinate the green beans in the dressing for 1 hour. Place the green beans on a platter and add onions & crisp bacon.
