Heirloom Tomato Gazpacho with Avocado Mousse
paired with our Sonoma Valley Barbera
Ingredients
Soup:
3 lbs. heirloom tomatoes, roughly chopped
2 cucumbers, peeled and seeded
½ red onion, roughly chopped
1 red bell pepper, seeded, roughly chopped
2 fresno chilis seeded, roughly chopped
1 bunch of cilantro, leaves picked, no stems
1 clove of garlic, peeled
2 tbsp of fresh lime juice
Salt & pepper to taste
Avocado Mousse:
2 avocados, peeled and seeded
¼ cup sour cream
Fresh lime juice
Salt & pepper to taste
Directions
Soup:
In a food processor combine all ingredients and push through a sieve that has medium sized holes. Season with salt & pepper and refrigerate. Serve in a chilled bowl or cup. Serves 8.
Avocado Mousse:
Combine ingredients in the food processor until smooth. Season to taste. Makes 1½ cups.
