Crispy Tortilla with Marinated Prawns & Avocado Salsa
paired with our Knights Valley Sangiovese


12 prawns, peeled and de-veined
¼ cup mango-chili vinegar (Wine Country Kitchen)
¼ cup tequila
1 lime, juiced

1 avocado, peeled and diced small
1 lime, juiced
1 tomato, cored and diced small
1 Fresno chili, minced
½ bunch cilantro, chopped fine
½ bunch cilantro, leaves picked
salt and pepper to taste
1 bag tortilla chips


In a bowl combine the prawns, vinegar, tequila and lime juice and let marinate for 20 minutes. In another bowl combine the avocado, tomato, chili, chopped cilantro, lime juice and season to taste. Saute the prawns over medium high heat until the color changes and prawns are slightly firm to the touch. Remove from pan and let rest on paper towel. Place the avocado salsa on a chip and then top with a prawn and a picked cilantro leaf to garnish. Makes 12 bite-sized pieces.
