Cherry Truffle
paired with our Sonoma Valley Merlot

1 ½ cups cream
1 ¼ cups cherry cider or juice
2 oz. Cherry liquor
29 oz. dark chocolate
(70% cocoa or more is recommended)
1 cup cocoa powder

Chop the chocolate into small pieces so that it will melt with ease. In a saucepan bring the cherry juice and liquor to a boil. Add the cream and again bring to a boil. Pour this mixture over the chocolate and whisk until it is melted and smooth. Pour into a bowl and let cool for 2 hours or until it is room temperature. Beat the mixture with an electric whisk for about a minute or until it changes color. Fold in the chopped cherries evenly throughout the mixture. Pour this mixture onto a baking pan and refrigerate for about an hour. Scoop the truffles out with a melon baller or small ice cream scoop and place in the cocoa powder to coat. Serve at room temperature. Makes about 40 truffles depending on the size.
