Bloomsdale Spinach Risotto
paired with our Ledson Knights Valley Zinfandel

1 box risotto (Arborio rice)
1 medium yellow onion, peeled & diced small
½ pound butter
2 cups white wine
3 quarts chicken stock
3 cups Bloomsdale spinach, cut into 1/4 inch strips
1 cup Primosa cheese
salt and pepper to taste

In a sauce pan heat the chicken stock and simmer. In a large pot over medium heat, cook the onions in the melted butter until translucent. Be very careful not to brown the onions. Add the risotto and stir for about 2 minutes. Add the white wine and stir constantly until all the wine is absorbed. Add the chicken stock a cup at a time and stir to absorb. Continue this until the rice is completely cooked, usually about 25 minutes. When the rice is cooked, add the spinach and the cheese and stir to combine. Season to taste and serve.
